Pepper Jelly Glazed Jerk Chicken

About the Recipe

Most people have heard of jerk chicken! It is a classic Jamaican barbecue style chicken required at every party! Here we take the jerk chicken up a notch by using our GENNY GRAHAM Pepper Jelly as a glaze!

Ingredients

INGREDIENTS

Chicken

4 leg and thigh pieces of chicken

1 lime or lemon

½  cup wet Jerk seasoning or 2 tbsp dry jerk seasoning


Marinade sauce

½ tbsp Dark brown sugar

I tbsp  sunflower oil

1 tbsp tomato puree

I garlic clove

2 tbsp water


To finish

½  Jar of GENNY GRAHAM Pepper Jelly (whatever flavour you fancy!)

Preparation

  1. It’s a good idea to wear gloves when prepping your chicken. Prepare the chicken pieces discarding any internal organs.

  2. With a sharp knife, score the leg and thigh deeply into the flesh with three parallel cuts.

  3. Cut the lime or lemon and squeeze the juices onto the chicken and rub it everywhere.

  4. Slather the jerk seasoning all over the chicken covering it all over  and especially in the cut areas.

  5. Cover securely  in a sealed container and leave in the bottom of the fridge overnight.

  6. Make the sauce, by mixing together, allowing the sugar to dissolve to make it thick but fluid.

Cooking in the oven

  1. If cooking in the oven, preheat  it at 200ºC/400ºF

  2. Lay your chicken skin side down on the baking tray, and roast for 20 minutes, then turn and brush with the marinading sauce. Roast your chicken pieces for a total at least 1hr minutes. Test the chicken by piercing with a skewer or sharp knife to make sure that only clear juices run from the chicken. If there is any blood running then the chicken is not fully cooked, and should be returned to the oven.

Cooking on the barbecue

  1. If cooking on the barbecue, set your barbecue ready for cooking at medium heat.

  2. Lay skin side down on the grill and cook turning and basting the chicken pieces at intervals with the sauce. Cook again and close the lid of the barbecue to steam the chicken, brush with the sauce at intervals to keep moisture and flavour in. The chicken should be fully cooked in about 45 minutes. Steam the chicken with the cover down for the last 10 minutes. Test the chicken with sharp knife of skewer to find clear juices running from the chicken if cooked.

To finish!

  1. Now glaze your chicken with your favourite flavour pepper jelly!

  2. Serve your Jerk Chicken with traditional rice and red beans, fried plantain and some salad.
