Halloumi Cheese Sandwich with Pepper Jelly

About the Recipe

Do you need a recipe for a sandwich? You know, sometimes you do! Good sandwich making is an art!

Complete with crispy fried halloumi, sweet roast peppers and creamy avocado, this delicious recipe is the perfect way to use any pepper jelly of your choice.

Ingredients

2 x 10cm wide portions of a Ciabatta loaf or large sour dough bread

Drizzle of Olive oil

Original Pepper Jelly

8oz Halloumi cheese

1 medium creamy ripe avocado

Salt and Black pepper

2 ready roasted red peppers from a jar

4-6 lettuce leaves e.g lollo rosso, coral, gem, cos, romaine, iceberg

Preparation

  1. Set a frying pan on the stove and turn the heat onto medium heat. Drizzle with olive oil.

  2. Sliced  the bread in 2 through the middle and lay cut side down in the warm olive oil and let it toast in the pan about 1-2 minutes until golden. Do this in batches until all the bread is toasted on one side.

  3. Remove the toasted bread, and wipe the frying pan with a kitchen towel to remove crumbs.

  4. Put the frying pan back on the medium heat and slice the halloumi cheese into 8mm slices. Toast  in the pan for one to two minutes on each side or till golden brown

  5. Remove two ready roasted red peppers from the jar and pat dry with kitchen paper. Cut into large wide pieces to fit the sandwich.

  6. Slice the avocado into 10mm slices.

  7. Wash the lettuce and pat dry with kitchen paper.

SANDWICH ASSEMBLY

  1. Toast side up, spread on a generous layer of pepper jelly,

  2. Add some lettuce,

  3. Lay on some roasted red pepper.

  4. Then lay on the toasted halloumi cheese  slices leaving no gaps.

  5. Add on the slices of avocado overlapping them as you go and sprinkle with sea salt and freshly ground black pepper.

  6. Finish with some more lettuce and top with the other side of olive oil toasted bread, slathered with more pepper jelly.

  7. Hold firmly and eat with care. It could be messy! But enjoy!
